Tasting Notes

It's a creamy, textural wine with ripe stone fruits, honey and buttery aromas and flavours, unoaked, along with a twist of matchstick on a fresh and persistent finish. Sensational value for money. This was the first parcel to gain organic certification in 2008. In terms of winemaking, each batch is pressed and lightly settled before being racked into used barrels with plenty of solids. It's wild-fermented, then raised un-sulphured on its lees.

Harvest:The fruit was hand and machine harvested in small batches as the season unfolded

Winemaking:Each batch was pressed and lightly settled before being racked to barrels as a cloudy juice. Fermentation was allowed to begin naturally and the barrels then underwent fermentation at there own pace. After fermentation the wine was left on full lees unsulfured. Most barrels began spontaneous malo-lactic fermentation that was allowed to proceed to completeness.

Viticulture:Determined to utilise biodiversity as a management tool for pests and diseases instead of chemicals. Vineyards are inescapably novel ecosystems but our aim is to encourage maximum interface between real wilderness and our commercial endeavours.
