Winemaking:Fruit was de-stemmed, crushed, and the must held on skins for 24 hours. The juice was then drained and gently pressed, resulting in a fine free-run cut and a pressings component, each kept separately in stainless steel tanks. Adopting a European style of winemaking, this wine is fermented on 'full solids', using the natural yeast flora present in the vineyard. A cool, temperature-controlled fermentation is carried out over 10-14 days. Weekly lees stirring over six months adds another layer of complexity and texture.
Viticulture:Vineyard in Polish Hill River: Grey loam soils over sandstone and slate make up the profile, with the topsoil littered with rock, hinting at just how tough the vines need to be to sustain growth and produce quality fruit.
Food Pairing:Pork and apple sausages, Spicy Thai green curry, Sweet and sour chicken, Smoked salmon sushi, Prawn and vegetable stir-fry, Pork tenderloin with apricot glaze, Thai mango sticky rice.
