Winemaking:Each parcel undergoes whole bunch pressing and individual fermentation, including MLF. The Estate blend combines parcels and reserve wines, aged in tanks and barrels. Bottled for secondary fermentation, it ages on lees and cork, with a dosage of 8.5g/l.

Viticulture:The vineyard, 17 meters above sea level and six miles from the English Channel, surrounds the winery and from a south-west slope stretches out towards a wood with giant oak trees, creating a warm and protected microclimate. The top soil is Tunbridge Wells Sand, a fine sand and silt loam, above clay.

Food Pairing:Salmon tartare, Turkey roll, Fruit tarts, Sushi rolls, Spicy tuna poke bowls, Papaya salad, Grilled prawns with a tamarind glaze, Roasted quail with berry sauce.
