Winemaking:Each vineyard block is fermented separately in small open-top fermenters and painstakingly hand-plunged for around 14 days until the sugars are completely dry. Racked into various sized barrels for maturation.

The Real Review - Huon Hooke

The colour is quite a deep red with good tinges of purple, the bouquet earthy and plummy with some jammy aspects and a little herbal-minty character. The wine is very earthy on the palate, the tannins chewy and savoury, the structure winning over the fruit. It’s quite a solid, almost rustic style of red and needs food with protein.

Paxton is at the forefront of organic and biodynamic practices in viticulture and winemaking. All their wines originate from their estate vineyards in South Australia's McLaren Vale. Founded in 1979, it's a family-owned business. David Paxton, the founder and owner, is a highly respected viticulturalist in Australia, with over 30 years of experience in cultivating top-quality wine grapes. For three decades, the Paxton family has nurtured their vineyards in McLaren Vale, an internationally acclaimed wine region known for its superb premium wines, especially reds. In 2000, they introduced their first PAXTON-labeled wine, the 1998 Paxton Shiraz. Today, with guidance from consultant winemaker Kate Goodman and winemaker Ashleigh Seymour, Paxton produces an array of estate-grown wines that represent McLaren Vale's fruit quality, natural diversity, and varietal expression. They adopt minimal intervention winemaking to preserve the fruit's integrity. In 2005, they opened their cellar door at Landcross Farm, a historic sheep farm from the 1860s and the original village site, now open daily for tastings, events, and functions.
