Wine Ageing:Combination of 3-year-old French and 4-year-old American oak barrels with further 12-month maturation in stainless steel tanks.

Winemaking Style:Traditional

Winemaking:Fermented in open fermenters with the cap hand plunged daily for six days. The wine was racked six monthly prior to finishing its 12-month maturation in stainless steel tanks.

Viticulture:From a Cowra, NSW vineyard planted in the mid-1990s on land which was once a free-range piggery.

Organic winemaking has flourished in recent years, making Jason O'Dea and his wife Rebecca's choice to embrace it 21 years ago a wise decision. Their vineyard, Pig In The House, is situated 20 kilometres from Cowra in New South Wales' picturesque Central Ranges. Established in 1996, it's owned and managed by Jason and Rebecca O'Dea. The property once accommodated free-range pigs, and the current house was a friendly abode for them, a house now shared by Jason, Rebecca, and their three children. The terroir of this site is well-suited for crafting premium wines. The O'Deas firmly believe that healthy soil is the foundation of their organic wine production and essential for their farm's sustainability. Their commitment includes compost application, mulching, biodynamic preparations, and the management of cover crops to increase soil humus and organic matter.
