Tasting Notes

Pale straw in colour. Fresh aromas of cut green grass, green apple and citrus. Flavours of green apple, grassy, lemon and lime citrus followed by fresh acidity, light bodied with a slightly waxy texture and honey-like characters through the back palate.

Winemaking:Whole bunch pressed to tank. The juice was fermented in tank and kept on lees for 3 months to build texture. Fined using pea protein. Racked, stabilised and filtered prior to bottling.

Viticulture:Grown throughout warmer regions in Southern Italy, Fiano thrives in Heathcote's warm days and cool nights. The majority of the fruit came from Chalmers vineyard on the eastern side of the Mount Camel range in Colbinabbin, along with a small amount from our Tellurian vineyard where ancient rich, decomposed greenstone rock and limestone and soil depths up to 2m allow roots to reach deep, while relatively low fertility controls vigour and yield.
