Tasting Notes

The 2011 Guardsman has a typical Cabernet Sauvignon nose with black currant and cedar notes. It has a depth and fine texture and a natural sweetness accompanied with fine tannins. Complex and enticing aromatics of sweet red fruit, baked earth and crushed red rose. Bright flavours of mixed red and black berries with touches of nutmeg, cardamom and cinnamon highlight the palate along with an intriguing subtle smoky note. The tannins are approachable and very elegant, carrying the flavour and structure well on the finish. Given its serious, fine structural tannins, the wine delights with a feel of satin in the mouth.

Winemaking:The grapes were destemmed. Fermentation was with wild yeast from the vineyard. The wine spent sometime macerating on its skins to achieve balance and was then pressed using a traditional basket press. During the winter and spring the wine components developed in oak barrels before being blended and then returned to oak barrels to mature until balanced and ready to bottle. The wine was lightly fined with organic egg whites.

Viticulture:Gimblett Gravels region is known for producing high-quality wines that are complex and flavorful, thanks to the unique terroir and warm climate of the area.
