Disgorged in January 2021, Pierre and Sophie's creation is a seamless blend from two intimate, adjoining Avize vineyards. The Chemin de Plivot, rooted in 1955, and the Chemin de Flavigny, established in 1960, are both nestled on Avize's gentle slopes, enriched by profound chalky depths and a whisper-thin layer of topsoil. Each bottle matures gracefully, cradled by its natural lees for over four years. Upon awakening, the wine is hand-disgorged and kissed with a mere two grams of dosage, preserving its pristine essence and terroir-driven character.

Winemaking:Grapes undergo gentle pressing, with juices lightly settled before barreling. Both natural alcoholic and malolactic fermentations proceed spontaneously in Stockinger barrels. The wines mature on natural lees for a year without filtration or fining. Each bottle is manually disgorged 6 months prior release. The dosage is only 2g/l.

Viticulture:Situated in Avize's village core, specifically in "Chemin de Plivot" and "Chemin de Flavigny", this area boasts shallow soil with chalk close to the surface. The 50-year-old vines extract delicate floral nuances and a distinct mineral richness.

Food Pairing:Sushi, Prawn and saffron pasta, Gruyère cheese soufflé, Lobster salad, White truffle and asparagus tart, King crab legs with lemon and butter sauce, Ossetra caviar on blinis with chive and egg yolk.

Larmandier-Bernier's 2013 Extra-Brut Blanc de Blancs Grand Cru Les Chemins d'Avize is showing brilliantly, unfurling in the glass with a lovely nose of citrus oil, fresh apricot, peach and pear, complemented by hints of fresh walnuts and almond paste. Full-bodied, deep and vinous, it's layered and elegantly muscular, with a concentrated core of ripe fruit, racy acids and a long, mineral finish. Pierre Larmandier invariably excels in cool, late growing seasons, so the 2013 vintage was perfectly adapted to his talents.
