In the Qvevri process, they are arranged in a system of terraces consisting of several stages, where the wines flow from one clay container to the next during further aging only by gravity and without pumping over. All wines are fermented spontaneously not fined or filtered and only minimally sulphured before bottling.
Viticulture:The vineyards are situated in the Alazani and Iori basins, ranging from 400 to 700 meters above sea level, and are characterized by humus-carbonate, black, and alluvial soils.
Food Pairing:Smoked eggplant, Lentils soup, Fried eggplant with tahini and pomegranate seeds, Fried artichoke, Roasted cauliflower with tahini sauce.
