Winemaking:The grapes undergo primary fermentation, traditionally in open top containers. Once primary fermentation is completed, while the wine is still slightly sweet and active with yeast, it's bottled without adding any secondary yeasts or sugars.

Viticulture:The soil is primarily composed of marl and sandstone, planted on steep hillsides, with elevations ranging typically from about 250 meters to 350 meters above sea level.
