Every barrel is treated differently, with some undergoing oxidative aging and others undergoing malolactic fermentation. Each barrel represents its own unique project.

Viticulture:Hollenburg's vineyards feature conglomerate rock, formed from Limestone Alps sediment carried by the ancient Traisen River. This soil contains varied-sized cobbles and pebbles bound by calcium carbonate, making it calcareous and alkaline (pH 7.5).
