Harvest:The 2023 vintage is exceptional, with both great volume and quality. After 13 years of organic vine-growing, the estate overcame a rainy spring without mildew and was saved by a late summer storm, bringing relief to vines affected by drought.

Winemaking:Destemming, crushing of the berries and pressing. Low-temperature alcoholic fermentation (18°C). Blending of the grape varieties.

Food Pairing:Salade Niçoise, Fish stews, Salmon tartare, Salmon nigiri, Salmon sushi rolls, Turkey sandwiches with cranberry, Quiche Lorraine, Olive and anchovy tart.
