Harvest:The grapes are hand-harvested in small 15kg crates during the last week of September.

Winemaking:The process involves destemming, crushing, and pressing the grapes. Alcoholic fermentation occurs over 10-12 days at a temperature of 15°C to 16°C in steel tanks.

Viticulture:Located in the southeastern area of the Garda morainic amphitheater, the hills, stemming from glacial deposits between Verona and Lake Garda, boast variable soils composed of calcareous clay mixed with gravel, smooth rocks, and sand.

Food Pairing:Niçoise salad, Salmon tartare, Salmon poke bowl, Quiche, Seafood pancake (Haemul Pajeon), Thai shrimp salad (Yum Goong).
