Winemaking:Grapes are macerated together with the stems in Georgia's traditional clay vessels, the qvevri (or kvevri), and then ferment for several months on the skins. In the Qvevri process, they are arranged in a system of terraces consisting of several stages, where the wines flow from one clay container to the next during further aging only by gravity and without pumping over. All wines are fermented spontaneously not fined or filtered and only minimally sulphured before bottling.

Viticulture:The vineyards are situated in the Alazani and Iori basins, ranging from 400 to 700 meters above sea level, and are characterized by humus-carbonate, black, and alluvial soils.

Located in the heart of Kakheti, the epicenter of Georgia's winemaking, lies the Papari Valley winery. At the helm of this family-run endeavor are Nukri Kurdadze, his wife Keti, and their son Sandro. Their journey commenced in 2004 with the acquisition of a modest 2 hectares of vineyards, but over time, their ambition expanded their holdings. Here, the focus is on nurturing two of Georgia's most prized indigenous grape varieties: Saperavi and Rkatsiteli. Nukri Kurdadze's philosophy is a harmonious blend of modern Western winemaking techniques and the timeless wisdom of Georgian viniculture. This fusion comes to life through the Kakhetian winemaking process, a tradition treasured by the people of Georgia. In this ancient method, grapes and stems are gently crushed within the confines of traditional Georgian clay vessels known as Qvevri. Here, they ferment on the skins for an extended period, imparting layers of complexity and character to the wines.
