Winemaking:The musts were fermented in vats at 18°C, and fermentation was halted through cold treatment and filtration to avoid the need for excessive sulfur usage. The resulting wine maintains approximately 80 g/l of residual sugars, showcasing a very well-balanced profile.

Viticulture:The vineyard is located on a plateau corresponding to the middle terrace of the Tarn. The terroir is made up of very beautiful gravel soils.

Food Pairing:Seared foie gras with fig compote, Roquefort salad with pears and walnuts, Crème brûlée, Poached pears, Apricot tart.
