Winemaking:The process commences with whole bunch pressing, and natural fermentation follows. The wine is then transferred into aging tanks (steel) before being bottled. In the bottle, it undergoes a second fermentation with organic yeast for a few weeks. Following this, it matures on the lees for 12 months. The final stages entail disgorgement, dosage, and the addition of minimal sulfur (the only time it is added).
Viticulture:The Sausal region's soils are austere, primarily composed of Paleozoic slates, with pockets of shell limestone, particularly prevalent in the Flamberg vineyard area.
