Organic farming removes the chemical layer that can mask a wine's true character, and the difference shows in the way the wine tastes and ages.

Research consistently shows that organically farmed wines contain higher levels of polyphenols and resveratrol than their conventional equivalents. They also tend to carry lower levels of synthetic additives, which matters to anyone who has noticed that not all wines affect them the same way. And because organic producers rely on healthy, expressive fruit rather than cellar correction, the cool-climate acidity that defines great Tasmanian pinot noir remains intact, which is precisely what allows these wines to age so well.

A well-made Tasmanian organic pinot noir drinks beautifully on release and continues to develop for two to five years in the bottle. The best examples from strong vintages can hold for a decade or more, and they reward the patience.

When your wine arrives

We pack every order in Sydney with the journey in mind, but wine still needs a little time to recover after transit. Stand the bottle upright for 24 to 48 hours before you open it, and you will notice the difference in how it shows.

After that rest period, store it on its side somewhere cool and dark. A consistent temperature between 12°C and 15°C is ideal, and a dedicated wine fridge is the best solution if you have one. Away from the kitchen, away from direct light, and away from anything that creates vibration — all of those things work against a wine over time.

Once you open a bottle, Tasmanian pinot noir is best enjoyed within two to three days. It is a lighter-bodied red with fine tannin, which means it is more sensitive to oxygen than a shiraz or cabernet would be. Recork it, put it in the fridge, and let it come back to around 15°C before you pour the next glass.
